Klutzy Kitchen: Peanut Butter Pumpkin Spice Cookies

One of my favorite things about this time of year is all the fun and tasty baking that comes along with it. Given that I work about 40 hours a week, and I am pursuing a dual degree, however, I do not always have time to do things like grate zucchini. Honestly, sometimes I want all the reward with none of the work, sweat, or tears. It is the American Dream, and it is my dream. It is the dream I share with you today.

This recipe is always a hit, and it’s exceedingly easy to make. Admittedly these cookies are a bit of a cheat.  They are, however, tasty.  They are also gluten-free, for those who are interested. (I had no idea; I just thought they were simple and tasty.)

So go ahead! Put forth minimal effort, and then take credit when people fawn all over them. Feel free to use the following phrases when talking about all the “hard work” it took to make this peanut buttery pumpkin goodness:

“Well, slaving away in the kitchen is all worth it when I see what joy my cooking brings to others.”

“Oh, it was nothing. A few hours here, a bit back-breaking elbow grease there…”

“I now have carpal tunnel, but what is art without suffering?”

Peanut Butter Pumpkin Spice Cookies

Ingredients:
1 jar of creamy peanut butter (**)
2 eggs
1 cups of sugar (or sugar substitute, like Splenda)
1/2 cup brown sugar
1 tablespoon vanilla extract
1 tablespoon baking soda
2 heaping tablespoons of pumpkin spice

**I prefer to use the natural creamy peanut butter that has the oil pooled on top. It blends more smoothly.

Directions:

1. Preheat your oven to 350 degrees.

2. In a bowl, combine and blend all ingredients thoroughly. Might look a bit crumbly, but that’s okay!

3. Make 1 inch balls out of cookie dough, and flatten them, but not too much. (I use my tablespoon measuring spoon like an ice cream scoop for this.) Place them on a greased baking sheet about 2 inches apart.

4. Bake for approximately 10 minutes, in batches. Let cookies cool on a plate. (Be careful when moving them to a plate, as they are apt to fall apart when they first get out of the oven.)

5. Enjoy!
